As we transition into the summer months, the demand for refreshing beverages escalates. Whether you're planning an outdoor event or simply seeking to enhance your evenings at home, our list of specialty cocktails will provide you with the inspiration you need to cool off this summer.

Bourbon Peach Punch

Peaches are a refreshing summer fruit and after a day in the sun, this drink is the perfect way to cool down. If you’re a bourbon lover then this is a must-have cocktail for the season.

  • 1.5 ounces of bourbon
  • 1 ounce of pineapple juice
  • 1 ounce of lemon juice
  • 1 peach sliced into 8 slices
  • black pepper to garnish

Make peach ice cubes by adding 1 sliced peach into each cavity of an ice cube tray that makes 6 large cubes. Fill with water and place in the freezer. After the cubes are frozen, muddle two peach slices in the bottom of a shaker. Add bourbon, lemon juice, and ice and shake to mix and chill. Place one peach ice cube in a tumbler glass and strain the contents of the shaker over it. Top with an ounce of pineapple juice and fresh-cracked black pepper.

Breakfast At Tiffany's

Like Audrey Hepburn in the classic romantic comedy, this cocktail from Jorge Centeno of  Illinois' Deer Path Inn, is delightfully quirky and intriguing. It's another one that made Forbes' list of refreshing summer cocktails.

  • 2 oz. of vodka
  • 1/2 oz. of hibiscus syrup
  • 1 drop of Florida honey
  • 1/2 oz. of lemon juice
  • Champagne

Fill a mixing glass with ice and add the first four ingredients. Stir to combine, then pour it into a teacup. Top the mixture with a splash of champagne, then garnish it with a lemon slice and a delicate edible flower.

Bee's Knees

This classic cocktail from the Roaring '20s has a Florida twist with a bit of grapefruit peel added to the shaker cup. It features gin because, according to the Robb Report, "If the sun's out, the gin needs to be out." Who are we to argue?

  • 2 oz. of gin
  • 3/4 oz. of lemon juice
  • 3/4 oz. of honey syrup (or to taste)
  • Twist of grapefruit peel (twisting the peel releases the essential oils we're after)

Add all four ingredients to a cocktail shaker, top with ice, and shake hard for 10 to 12 seconds. Strain into a martini glass and garnish with a fresh twist of grapefruit peel.

Paloma

This new take on the national cocktail of Mexico uses fresh Florida grapefruit juice in place of the usual sugary grapefruit soda. The slightly bitter grapefruit makes it extra refreshing while the lime balances it to keep it from becoming overly sweet. And the salt? Well, it keeps you coming back for just one more sip.

  • 2 oz. of tequila (only 100% agave will do)
  • 1/2 oz. of lime juice
  • 1 oz. of fresh-squeezed Florida grapefruit juice
  • 1/2 oz. of simple syrup
  • 3 to 4 oz. of soda water

Prepare a tall glass by salting the rim. Fill a shaker jar with ice, add everything except the soda water, and shake well. Strain it over fresh ice in the prepared glass and top it with the soda water. Garnish with a twist of grapefruit peel. Then sit back, relax, and ignore the heat.
